Paleo eating is often challenging, especially around the holidays, but the Internet is full of substitute ideas for cheerful treats. I tried a paleo recipe for shortbread cookies, it had only six ingredients: almond flour, coconut sugar, coconut oil, vanilla and baking soda. While it was a little dry and coarse, it was still sweet and satisfying, a precious rarity in the paleo diet. Shortbread is typically a cookie that needs patience to enjoy, given that it has a thick texture. For this particular recipe, using real butter would have made the taste richer and supplied the missing piece to a perfect winter snack. As is, the shortbread cookies are satisfying and healthy.
